In preparation for the 2026 launch of La Rôtisserie, a French-inspired artisanal rotisserie at Tana Russet Plaza, Port Vila, we are looking for a skilled Deli Caterer / Rotisserie Manager to lead and develop our food operation. This role will focus on delivering high-quality artisanal products and exceptional service.
Job Description
The Deli Caterer / Rotisserie Manager will oversee all aspects of the rotisserie and catering operations, ensuring consistency, quality, and authenticity in our French-inspired offerings.
Key Responsibilities:
•Manage the production of French-inspired rotisserie dishes and artisanal charcuterie using local ingredients.
•Maintain strict standards for hygiene, quality, and consistency.
•Lead, train, and supervise a team of approximately 20 staff members.
•Oversee daily operations, production schedules, and inventory management.
•Adapt creatively to the island environment while maintaining the integrity of traditional French techniques.
•Ensure the catering and deli operations meet customer expectations for both taste and presentation.
Candidate Requirements
•Proven experience as a deli caterer or charcutier.
•Strong knowledge of French culinary techniques and craftsmanship.
•Hands-on, reliable, and capable of managing a team independently.
•Ability to adapt operations creatively in a local island context.
•Strong leadership, organizational, and communication skills.
