Overview of the Role
The Executive Chef will function as the senior culinary leader and Production Manager, responsible for overseeing all food production and kitchen operations across outlets and banquets. This role requires close collaboration with the Director of Food & Beverage, Outlet Chefs de Cuisine, and operational departments to ensure exceptional food quality, operational efficiency, guest satisfaction, and financial performance in line with Warwick International standards.
Key Responsibilities
•Oversee all kitchen operations to ensure compliance with company policies, hotel standards, and food safety regulations.
•Collaborate with Outlet Chefs de Cuisine to develop, approve, and maintain menus that meet market demands and brand standards.
•Ensure consistency in food quality, presentation, taste, hygiene, and cleanliness across all outlets and banquets.
•Coordinate effectively with Materials Management, Purchasing, and Stewarding teams.
•Monitor food standards, implement corrective actions where required, and drive continuous improvement.
•Approve all menus and product specifications, ensuring alignment with seasonal availability and local market needs.
•Encourage innovation and creativity within culinary teams.
•Maintain accurate food recipe data and oversee operational manuals for kitchen departments.
•Financial & Commercial Management
•Control food and labor costs across all outlets and banquets.
•Support Chefs de Cuisine in budget preparation and cost management.
•Monitor kitchen-related expenses and recommend operational efficiencies.
•Partner with the Director of Food & Beverage to maximize revenue and profitability.
•Assist in developing incentive schemes for Food & Beverage leadership teams.
Marketing & Product Development
•Identify food trends and market needs for both in-house guests and the local market.
•Analyze competitor menus and offerings to maintain market relevance.
•Plan and execute food promotions in collaboration with Outlet Managers and Sous Chefs.
•Test and introduce new products in alignment with brand and guest expectations.
People & Talent Management
•Lead, mentor, and develop Chefs de Cuisine and culinary teams to operate independently and effectively.
•Foster a positive, high-morale work environment focused on performance and growth.
•Oversee recruitment, onboarding, training, performance appraisals, and succession planning.
•Ensure staffing levels align with business demand and productivity targets.
•Enforce discipline, policies, and hotel standards consistently and fairly.
•Collaborate with the Training Manager to deliver structured training programs.
•General & Compliance Responsibilities
•Lead by example in professionalism, punctuality, and adherence to hotel policies.
•Ensure compliance with health, safety, hygiene, fire, and emergency procedures.
•Maintain strong interdepartmental relationships and represent the resort professionally.
•Adapt to industry trends and undertake additional reasonable duties as assigned by senior management.
Selection Criteria
•Proven experience as an Executive Chef or in a senior culinary leadership role within a luxury hotel or resort.
•Strong expertise in menu development, budgeting, cost control, and supplier management.
•Demonstrated leadership capability with the ability to inspire and develop diverse culinary teams.
•Sound knowledge of HACCP standards, food safety regulations, and industry best practices.
•Commercial acumen with a proven track record of operational efficiency and profitability.
•Excellent communication, interpersonal, and organizational skills.
